How to Clarify Cocktails
Clarification transforms cloudy cocktails into crystal-clear drinks without losing any flavour. Learn milk washing, centrifuge techniques and agar clarification at home.
Why clarify a cocktail?
Clarity in a cocktail is more than aesthetics — it signals refinement and technique. A crystal-clear Jungle Bird or Milk Punch creates surprise and signals that something unusual is going on. Beyond looks, clarification also removes bitter tannins and astringent phenolics from citrus, softening the texture and making drinks feel rounder on the palate.
Clarified cocktails also behave better in batch production: they last longer in the fridge without separating, and they look just as beautiful when poured into a glass days later.
Milk washing — the classic method
Milk washing is a centuries-old technique used by English punch makers and revived by modern bartenders like Dave Arnold. The process works because milk proteins (casein) coagulate when they meet acid, binding to bitter, astringent and colour-bearing compounds and dragging them out of the liquid.
How to milk wash a cocktail: 1. Build your cocktail as normal — citrus, spirits, sweetener, everything. 2. Slowly pour the cocktail into cold whole milk (roughly a 3:1 cocktail-to-milk ratio). Stir gently. The milk will curdle — this is correct. 3. Let it rest for 15–30 minutes. 4. Filter through a coffee filter or fine cloth (a jelly bag works well). The first pass will be slow and cloudy; return the first runoff back through the filter. After 2–3 passes it will run clear and golden. 5. Bottle and refrigerate. Shelf life of 2–4 weeks.
The resulting drink is silky, clear, and noticeably softer than the unclarified version. Milk-washed Negronis, Milk Punches and washed Jungle Birds are now bar-menu staples.
Agar clarification — faster and vegan
Agar is a plant-based gelling agent derived from seaweed. When dissolved in a hot liquid and then frozen, agar forms a gel that traps particulate matter. As the gel thaws, it releases a clarified liquid and holds the solids behind.
Method: 1. Dissolve 0.2–0.5 g of agar per 100 ml of liquid (start low — too much agar gives a firm gel that drains slowly). 2. Heat the mixture to at least 85°C (agar doesn't dissolve below this). If your liquid contains alcohol, heat the non-alcoholic components first and add spirits after cooling slightly. 3. Pour into a shallow container and refrigerate or freeze until set. 4. Transfer the gel to a fine strainer or cheesecloth and let it drip-drain at room temperature. 5. Squeeze gently to recover the rest. The result is usually clearer than milk washing with less flavour loss.
Agar clarification works well on fruit juices, herb infusions and low-acid drinks. It is faster than milk washing — the whole process can be done in 2–3 hours.
Centrifuge clarification (pro technique)
High-end bars such as the Fat Duck and Artesian use benchtop centrifuges to spin liquids at 3,000–4,500 rpm. The centrifugal force separates particulate matter from liquid in 5–15 minutes, with essentially zero flavour loss.
Home centrifuges capable of this are available (salad spinners are too slow at ~500 rpm). A proper benchtop centrifuge costs €200–800 — worth it if you clarify at volume. The technique is also used to separate fats from infused spirits (see fat washing guide).
Gelatin clarification
Sheet or powdered gelatin can be used similarly to agar. Dissolve gelatin in warm liquid, let it set in the fridge, then break it up and allow it to drip through a cloth at room temperature. Gelatin is not suitable for vegans and can leave a faint savoury note in very delicate drinks, but it is widely available and inexpensive.
Use 1–2 sheets (2–4 g) per litre of liquid. The technique is especially good for rich stock-based or egg-white cocktails where a slight savoury hint is acceptable.
Tips for best results
Use cold milk straight from the fridge — warm milk curdles less effectively. Wet the filter before passing liquid through it to prevent absorption. If filtering is very slow, refrigerate the whole setup rather than leaving it at room temperature.
The order of acid addition matters: pour the cocktail into the milk, never the other way around. Reversed, the milk proteins denature too quickly and you get a dense, hard-to-filter curd.
For batch production, multiply your recipe and clarify the whole batch at once. Clarified cocktails can be bottled and served straight from the fridge — no ice or shaking needed at service.
