Instructions

  1. Yuri is a stirred, vermouth-forward martini variation on oolong-infused vodka, softened by blanc and sweet vermouths, a raspberry lactic syrup and chocolate bitters.
  2. Stir 2 oz (60 ml) oolong-infused vodka (Grey Goose), 0.5 oz (15 ml) blanc vermouth (Dolin), 0.5 oz (15 ml) sweet vermouth (Carpano Antica), 0.25 oz (7.5 ml) raspberry lactic syrup and 2 pipettefuls chocolate bitters (Crude "Big Bear") with ice.
  3. Strain into the chilled glass.
  4. Garnish with fresh raspberries, a raspberry-hydrosol mist and a piece of chocolate.

  6. — Oolong-infused vodka — infused spirit
  7. Per 1 L vodka, add 20 g oolong tea and infuse 20 minutes; strain and bottle.
  8. — Raspberry lactic syrup (66° Brix) — house syrup
  9. Wash and dry raspberries; cover with an equal weight of white sugar and rest sealed at room temperature 24 hours. Strain the liquid, sugar-adjust to 66° Brix and acid-adjust with ~0.5 g lactic acid per 100 g syrup.
  10. — Cacao husk & bean hydrosol — aromatic mist (optional garnish)
  11. Distill 1 g crushed cocoa beans, 15 g cacao husks and 750 ml water; collect four ~10-minute fractions and pick the fraction that pairs best with brewed oolong.
