Instructions

  1. Fill the rocks glass with ice, pour in the Absinthe and top with chilled water. Set the glass aside.
  2. In a shaker, combine the Gin, Triple Sec, Simple Syrup and Peychaud's Bitters with ice and shake well.
  3. Tip out everything in the rocks glass (absinthe, water and ice) so only a coating of absinthe is left on the inside.
  4. Strain the shaken drink into the coated glass.
  5. Twist the orange zest over the drink to release its oils, then discard it.
