Stir Pineapple Rum, Cognac, Cynar, Kahlúa with ice. Strain into a rocks glass.

Inspired by the Palisades cocktail’s Cynar-coffee liqueur blend, I mixed it with the Cognac-pineapple rum base from my Big Spender and named it Why Don't You Do Right, after Peggy Lee's song. Some Instagram users questioned the name since the song mentions only a glass of gin, but most folks enjoyed it and shared their creations online. The coffee-pineapple combo has proven popular in classics like Mr. Bali Hai and modern drinks such as Moe Isaza’s Poderoso.

Instructions

Mix over ice, then pour through a strainer into a rocks glass containing one big ice cube. Finish by twisting an orange peel over the drink as a garnish.
