The Wee Paunch is a twist on the classic margarita, crafted with Irish whiskey instead of tequila. It features 2 ounces of Irish whiskey mixed with half an ounce each of lemon juice and barley malt syrup, plus a half-ounce of egg white for texture. A dash of Boker's bitters adds complexity before shaking without ice first to emulsify the egg white, then again with ice, straining it over fresh ice, and finishing with a few drops of bitters on top.
