Instructions

  1. Chill a martini glass.
  2. Add the egg white, lime juice, pineapple juice, vodka and flavored rum to a shaker with ice and shake hard.
  3. Strain the drink into the shaker tin without the ice, then shake again with no ice to build a thick foam.
  4. Strain into the chilled glass.
  5. Pour the blue curaçao into the centre of the foam. It sinks to form a blue base and leaves a blue spot in the head.
  6. Garnish with a pineapple wedge on the rim.
