Frederic Yarm created the Undercover Angel at Loyal Nine's Yacht Rock Sunday in 2015 as a twist on the Chrysanthemum, swapping the dry vermouth for Madeira and adding Maraschino liqueur, which suits both Madeira and absinthe and gives the drink an Old Fashioned feel from Jerry Thomas's era. The name comes from the Yacht Rock Sunday playlist rather than from a flower, as with the Calla Lily. The drink never made the regular menu, yet guests were still asking for it by name more than a year later.
