Shake Averna, Fernet Branca, Cynar, Simple Syrup with ice. Strain into a highball glass.

In April 2017, a San Francisco reader visiting Boston's Loyal Nine bar requested an evening-ending drink. Rather than serving a Flip, I opted for a New Orleans-style Fizz using three distinct amari: Fernet, Averna, and Cynar. Instead of soda water, I used ginger beer, similar to a Fernet Buck. The result was so impressive that the original requester's friend wanted one too (the drink in the photo). While the specific amari can vary based on inventory and taste preferences, they should include an aggressive, funky, and smooth flavor profile for balance.

Instructions

  1. Combine all ingredients except for the ginger beer and orange peel in a shaker.
  2. Shake briefly without ice, then shake again with ice added.
  3. Strain this mixture into a Collins glass filled with 2 ounces of ginger beer.
  4. Garnish with an orange peel twist and include a straw.
