Trasatlántico Fizz

A tall, foamy fizz where gin and grapefruit and tangerine juice meet the dry, salty edge of manzanilla sherry. Grand Marnier adds orange sweetness, egg white gives a soft head, and a smoky spritz of peated scotch hangs over the top.

- Chill a highball glass.
- Add gin, manzanilla sherry, Grand Marnier, grapefruit juice, tangerine juice, egg white, lemon juice and simple syrup to a shaker with ice.
- Shake hard until well chilled.
- Strain into the highball glass.
- Top with club soda.
- Garnish with an orange wedge and a spritz of peated scotch.
