At Loyal Nine, I took an apple brandy drink off the menu and needed a straight spirits replacement. Inspired by New Orleans classics like the Vieux Carré and Boston’s 1919 Cocktail, I chose aged rum over whiskey or agave. Initially considering Punt e Mes with Yellow Chartreuse for their compatibility with Calvados, I settled on Benedictine as it blended better without getting lost in the mix. The cocktail is named after a local who would come to the restaurant before opening hours seeking work or free meals and later disturbed diners during service with loud nonsense. Scaring him off by telling him to use his quiet voice solved that issue, but this drink honors the role of town criers from Colonial times.
