Instructions

  1. Whisk egg yolks until light and creamy.
  2. Gradually pour in rum, sugar, and spices while continuing to whisk vigorously.
  3. Beat egg whites until stiff peaks form.
  4. Gently fold the beaten whites into the yolk mixture until well combined and batter-like.
  5. Set aside this mixture.
  6. To serve, place 1 tablespoon of the reserved batter in each 6 oz heatproof mug.
  7. Add 2 ounces of brandy and stir thoroughly.
  8. Pour hot water into each mug and mix well.
  9. Garnish with freshly grated nutmeg.
