Instructions

  1. Saffron syrup:
  2. Combine 3 teaspoons saffron, 1 kg white sugar and 1 litre water.
  3. Stir until the sugar has dissolved.
  4. Drink:
  5. Fill a highball glass with ice.
  6. Add the thyme sprigs, apple juice, lime juice and gin to a shaker with ice.
  7. Shake hard.
  8. Strain into the ice-filled glass.
  9. Garnish with a caramelised apple slice and a thyme sprig.
