Instructions

  1. Chill a coupe.
  2. Shake the orgeat, Cognac, simple syrup, lemon juice and egg white with ice.
  3. Strain the drink back into the shaker, leaving the ice behind.
  4. Shake again without ice to build a dense foam.
  5. Fine strain into the chilled coupe.
  6. Slowly drip 10 ml (two spoonfuls) of Peychaud's bitters onto the middle of the foam. After about a minute, a thin pink line appears beneath the foam.
