Peel 6 for oleo-saccharum, reserve for juice = 1 1/3 cups

Instructions

  1. Create an oleo-saccharum by muddling the peels of six lemons with sugar in a bowl.
  2. Cover it, and leave it to infuse in a warm spot for several hours or chill overnight in the fridge.
  3. Once ready, extract the lemon juice and mix it thoroughly with the oleo-saccharum.
  4. In a large pot, heat milk until hot but not boiling, stirring continuously.
  5. Take off the heat and combine all remaining ingredients.
  6. Vigorously stir to cause the milk to curdle and separate into clear liquid.
  7. Strain through cheesecloth and adjust for taste by adding water or syrup as needed.
  8. Serve either warm or cold and garnish with freshly grated nutmeg.
