- Create an oleo-saccharum by muddling the peels of six lemons with sugar in a bowl.
- Cover it, and leave it to infuse in a warm spot for several hours or chill overnight in the fridge.
- Once ready, extract the lemon juice and mix it thoroughly with the oleo-saccharum.
- In a large pot, heat milk until hot but not boiling, stirring continuously.
- Take off the heat and combine all remaining ingredients.
- Vigorously stir to cause the milk to curdle and separate into clear liquid.
- Strain through cheesecloth and adjust for taste by adding water or syrup as needed.
- Serve either warm or cold and garnish with freshly grated nutmeg.
