Instructions

  1. Quarter a lemon and place it in a tin along with several mint leaves and simple syrup.
  2. Muddle the mixture well.
  3. Pour Cognac, Applejack, and egg whites (or aquafaba) into the tin and shake without ice for a dry shake.
  4. Add ice to the tin and shake again vigorously.
  5. Strain over a large ice cube in a rocks glass.
  6. Garnish with a mint sprig.
