- Set up a chemex with a paper filter, rinse it with boiling water, then remove the filter and pour out the water.
- Place 90ml Chivas 18 at the bottom of the chemex and immerse it in a hot water bath, covering about 2 inches.
- Put the filter back into place and add 21 grams of coffee ground slightly coarser than espresso.
- In a separate jug, combine 30ml syrup, 18 drops bitters, and 210ml freshly boiled water.
- Pour just enough hot mixture to wet the grounds, stir briefly, then wait 30 seconds.
- Slowly pour the rest in circular motions starting from the edge and ending at the center.
- When the cone is full, let it drip through before pouring the remaining liquid into the center.
- Once dripping slows down, discard the filter with coffee grounds.
