Instructions

  1. Combine corn masa with water in a big pot and bring to a boil.
  2. Lower heat and let simmer for around half an hour.
  3. Stir in piloncillo and keep simmering until it dissolves completely.
  4. Take off the heat, allow the mixture to cool down, then stir in lime juice once cooled.
  5. Transfer to a large jar or container with loose lid coverage and ferment at room temperature for three days.
  6. After fermentation, strain the liquid and serve over ice cubes.
  7. Sprinkle salt on top as garnish.
