Instructions

  1. Purée the fresh strawberries with the lemon juice and simple syrup until completely smooth.
  2. Spoon half of the purée into a flute.
  3. Add the cold Prosecco in several small pours, waiting for the foam to settle each time so it doesn't overflow.
  4. Stir once, gently, to combine the purée and the wine.
  5. Set a strawberry on the rim of the glass.
