- Starite is a shaken tropical cocktail on starfruit-infused vodka with bianco vermouth, house starfruit syrup, acid-adjusted pineapple, peach and gold luster.
- Shake 1.5 oz (45 ml) starfruit-infused vodka (Grey Goose), 0.5 oz (15 ml) bianco vermouth (Dolin), 1.5 oz (45 ml) starfruit syrup (50° Brix), 0.75 oz (22.5 ml) acid-adjusted pineapple juice, 0.25 oz (7.5 ml) peach juice syrup (50° Brix, Simply Peach), 3 dashes lemongrass-cardamom bitters (Honest John) and 0.25 tsp gold luster dust.
- Strain into the chilled glass.

- — Starfruit-infused vodka — infused spirit
- Sous vide 200 g dried starfruit in 400 ml vodka at 150°F (65°C) for ~1 hour, mashing halfway. Cool and filter. Yields ~450 ml.
- — Starfruit syrup (50° Brix) — house syrup
- Sous vide 100 g dried starfruit in 250 ml water at 150°F (65°C) for ~1 hour, mashing halfway. Filter and add 150 g sugar to reach 50° Brix. Yields ~400 ml.
- — Acid-adjusted pineapple juice — modified juice
- Per 100 ml Libby's pineapple juice, add 3.2 g citric acid and 2 g malic acid.
- — Peach juice syrup (50° Brix) — house syrup
- Start with Simply Peach juice (~10 Brix). Add sugar to reach 50 Brix using (mass × (50−10))/(100−50).
