Instructions

Chill the soda water and wine. Choose two glasses, such as red wine goblets, large wine glasses, or champagne flutes. Add ice cubes to each glass, about 5 per glass, or use crushed ice up to slightly more than halfway full. Slice citrus into quarters and then cut those pieces in half again. Place some slices in the glasses and reserve two for garnishing. Pour elderflower syrup into the mixture. Add wine and stir well. Finish by topping with a bit of soda water. Garnish with lemon wedges and lemon balm leaves. Insert a straw or drink stick, then give it one final stir before serving.
