Instructions

  1. Chill a coupe.
  2. Muddle the cucumber in the bottom of a shaker.
  3. Add the white rum, lime juice, elderflower cordial, egg white, mint sprigs and ice, then shake and strain into the empty shaker tin, leaving the ice behind.
  4. Shake again without ice to build a smooth foam.
  5. Pour through a fine strainer into the chilled coupe.
  6. Garnish with a mint leaf.
