Instructions

  1. Chill a cocktail glass.
  2. Add the simple syrup, white rum, pineapple juice, egg white and lime juice to a shaker with ice and shake well.
  3. Strain the liquid back into the shaker and discard the ice.
  4. Shake again without ice to build the foam.
  5. Fine strain into the chilled glass.
  6. Garnish with a pineapple wedge.
