Instructions

  1. Fill a rocks glass with ice and set it aside to chill.
  2. In a separate mixing glass, stir the rye whiskey, simple syrup and Peychaud's bitters with ice.
  3. Empty the ice from the chilled glass and rinse the inside with absinthe (or Herbsaint).
  4. Strain the stirred drink into the rinsed glass.
  5. Garnish with a lemon zest twist.
