Instructions

  1. Steep half a cup of rose or rose hibiscus tea with one teaspoon honey until done, then chill.
  2. Rim a stemless wine glass on one side using a lemon slice, followed by dipping it into Himalayan salt.
  3. Pack the glass with ice.
  4. Combine fresh lemon juice and grated ginger in the glass, measuring 1 teaspoon for the lemon juice and ¼ teaspoon for the ginger.
  5. Pour in the cooled tea.
  6. Finish by adding soda water to the top of the mixture.
  7. Decorate with a wedge of lemon and sprigs of thyme.
