I started thinking about creating a rhum agricole-based drink similar to the Georgetown Club but with Fino sherry instead of dry vermouth. The idea of adding pineapple syrup popped into my head, followed by Cynar, which complemented the syrup nicely in another cocktail. This concept gradually evolved from a Martini-like drink towards something more akin to a Negroni. For inspiration on a name, I chose Quimbois, reflecting the black magic traditions of Martinique that mirror Haiti’s Voodoo practices.
