Instructions

Chill the prosecco and mix it thoroughly with the pomegranate juice. Squeeze lemon juice, set aside some slices for decoration. Extract pomegranate seeds. Create simple syrup by combining equal parts water and sugar; heat until dissolved or use pre-made pomegranate syrup. Crack ice cubes. Put mint leaves and your chosen sweetener at the bottom of a glass. Gently crush the mint with a muddler or spoon handle, being careful not to overdo it. Pour in rum and pomegranate juice, then stir. Add cracked ice and pomegranate seeds to the mixture. Top off with prosecco until the glass is full. Serve with a straw and garnish with a lemon slice and/or mint sprig.
