It turns out the flavors of a classic French dessert, the red wine poached pear, work beautifully as a fall/winter cocktail. "Cooler weather naturally brings these flavors to the forefront: fuller red wines, baking spices, and pome fruits — evoking the true feeling of the season in each sip," says Siri, lead bartender of Philadelphia's 48 Record Bar. Instead of simply floating his Poached Pear cocktail with red wine a la a New York Sour, he makes a spiced syrup with red wine to imbue it with those baking spices. The result is a cocktail that's dessert-like but not too sweet.

- Combine all of the ingredients except for the spiced wine syrup in a shaker with ice.
- Shake until the shaker is cold and frosty, about 10-15 seconds.
- Strain into a large rocks glass with fresh ice.
- Add the spiced wine syrup by sinking it to the bottom of the glass.
