Instructions

  1. Chill a cocktail glass.
  2. Add the egg white, orange juice, Angostura bitters, cognac and apricot brandy to a shaker filled with ice and shake well.
  3. Strain the drink back into the empty shaker and discard the ice.
  4. Shake again without ice until the foam is thick and silky.
  5. Fine strain into the chilled glass.
  6. Garnish with an orange zest twist, then place 2 drops of bitters on the foam and draw them out with a cocktail stick.
