A pink twist on the 1915 classic — gin, lemon and sugar topped with rosé sparkling wine instead of brut champagne. Brighter, fruitier and the perfect aperitif for a summer wedding or terrasse afternoon.

The original French 75 was created at Harry's New York Bar in Paris during World War I (1915), named after the French 75 mm field gun for its kick. The rosé variant emerged in the 2010s as wedding bars looked for visually pinker takes on the classic — some prefer Crémant Rosé, others Cava Rosado or a young Spanish rosé Cava. The lemon-and-gin base is identical to the original; only the topper changes.

Instructions

  1. Combine 40 ml London dry gin, 30 ml fresh lemon juice and 10 ml simple syrup in a shaker.
  2. Fill with ice and shake hard for 10 seconds.
  3. Strain into a chilled flute or coupe.
  4. Top with 60 ml chilled rosé sparkling wine.
  5. Garnish with a lemon twist expressed over the surface.
