Pickwick Club
🥄Stir Pineapple Rum, Overproof Rum, Passion Fruit Syrup, Simple Syrup with ice. Strain into a rocks glass.
A patron at Drink requested an Old Fashioned with a fruity twist. Instead of using apple brandy and grenadine, I opted for a tropical flavor profile. The base was Plantation pineapple rum, sweetened with Don’s Spices #2 (a blend of vanilla syrup and allspice dram), passion fruit syrup, and seasoned with Angostura, mole, and absinthe bitters. To make up for the shortfall in volume, I added a splash of Plantation Original Dark Rum. The cocktail was well-received by three guests that evening, including the original requester. Intrigued by its success, I recreated it at home. Inspired by the rum’s origins linked to Charles Dickens’ Pickwick Club social club, I named my creation the Pickwick Club.
