"Pergélisol" translates to permafrost in French. While experimenting with Zirbenz, its taste and aroma reminded me of winter-frozen greenery. I aimed for herbal and resinous flavors, and St George Terroir complemented the other ingredients while preserving the spruce and bay leaf nuances.
