A fruity, lively sour of grassy rhum agricole, orange and elderflower liqueur, crushed strawberry and lime, topped with a float of ginger beer. Created by Paul Imbesi, Barritt's Ginger Beer brand manager, and first tried at The Rum Bar's Rum on the River event in Philadelphia in 2010.

Paul Imbesi, brand manager for Barritt's Ginger Beer, created the Pay Day in Philadelphia in 2010, and it was first tried at The Rum Bar's "Rum on the River" event. The original recipe uses Stirrings' Key Lime syrup, the creator's preferred choice, though simple syrup can stand in when that syrup is hard to find.
