Instructions

  1. Cut the passion fruit in half and scoop the flesh into a shaker.
  2. Add the simple syrup, white rum, limejuice and passion fruit syrup.
  3. Shake with ice.
  4. Strain into a highball glass filled with crushed ice.
  5. Stir the drink well with the ice, then top with champagne.
  6. Garnish with passion fruit.
