Passion Fruit Caipirinha

A caipirinha with passion fruit muddled in alongside the lime, so the sharp lime and cachaça pick up a tropical, tangy sweetness. Built in the glass and served over cracked ice.

Instructions

  1. Halve the lime from pole to pole. Cut one half into eight half-moon segments, about 3-4 mm thick, and drop them into the bottom of a sturdy rocks glass.
  2. Add the sugar and muddle.
  3. Halve the passion fruit, scoop the pulp into the same glass and muddle again until the juice is fully pressed out and the sugar has dissolved.
  4. Tip the muddled fruit and sugar into a highball glass.
  5. Pour the cachaça, ideally kept in the freezer, into the muddling glass and swirl it round to rinse the glass, then pour it into the highball glass. Stir to combine.
  6. Crack four to five large ice cubes, rather than crushing them, and drop them in. Stir, then top up with more ice.
  7. Serve with a stirrer instead of a straw.
