A tall, fizzy paloma-style drink with tequila blanco, pink grapefruit liqueur and a homemade passion fruit and yuzu cordial sharpened with malic acid. Peychaud's bitters adds a light aniseed spice.

- Set a clear rod of ice in a highball glass.
- Add the tequila blanco, Briottet Crème de Pamplemousse Rose Liqueur, Passion Fruit And Yuzu Cordial and Peychaud's Bitters.
- Top up with club soda.
- Garnish with a cube of pink or red grapefruit on top of the ice.
- Passion fruit and yuzu cordial (makes 1 litre, prepare ahead):
- Zest 3 yuzu and mix the zest into 500 g powdered sugar. Leave it overnight so the sugar takes on the aroma.
- Stir in the yuzu juice to make a yuzu sherbet.
- Scoop the pulp out of 10 passion fruit and add it to the sherbet.
- Cook the mixture sous vide for 3 hours.
- Add 10 g malic acid.
- Pass through a fine sieve into a bottle. Refrigerate and use within two weeks.
