Instructions

  1. Muddle five sage leaves into the maple syrup.
  2. Combine this mixture with bourbon, lemon juice, an egg white, and ice in a shaker.
  3. Shake well.
  4. Strain out the ice and sage leaves.
  5. Shake once more to create froth.
  6. Pour over a big cube of ice.
  7. Garnish with bitters and an additional sage leaf.
