Instructions

Cocktail: Old Timer To make the banana-infused bourbon, place one ripe banana in a pint-sized glass jar and cover with bourbon. Seal the container tightly and let it infuse for seven days, shaking gently each day to mix thoroughly. Afterward, pour the mixture through a fine mesh strainer into another container, discarding the solids. Store the infused bourbon in the refrigerator; while it won't last indefinitely, it should remain fresh for more than six weeks. For the brown-butter rum infusion, begin by melting half a stick of butter in a saucepan over medium heat until it reaches a golden brown color and stops foaming. Remove from heat and stir occasionally as it cools to room temperature. Pour this mixture into a jar filled with rum, seal tightly, and shake vigorously. Place the jar in the freezer until the butter solidifies at the top. Once set, use a spoon or knife to break apart and remove the solidified butter layer for future cooking purposes. Strain the remaining liquid first through a coarse mesh strainer then through a fine filter like a coffee filter to ensure no solids remain. Store the infused rum in the refrigerator where it should keep well for at least six weeks. To prepare an Old Timer, combine the banana-infused bourbon and brown-butter rum with ice in a mixing glass and stir until chilled. Strain this mixture into a rocks glass containing one large ice cube. Garnish the drink by placing a Werther's Original candy on the rim of the glass before serving.
