In the final episode of 30 Rock, Cooter Burger introduces Jack Donaghy to the Old Spanish, a cocktail he created using red wine, tonic water, and olives. Mad Men later referenced this drink when Ted Chaough ordered an Old Spanish but received something less than ideal. Inspired by these pop culture moments, we envisioned what an authentic old-style Spanish aperitif would be like: sherry instead of wine, Cynar for bitterness, tonic for fizz, and cassis to smooth the flavors.
