Shake Tequila Blanco, Mezcal, Agave Syrup, Lime (Half Of A Medium-Sized Lime) with ice. Strain into a rocks glass.

In 2017, while working at Loyal Nine, I got the idea for an Oaxacan Smash from sage growing in my garden. The pairing of agave and sage reminded me of Jacques Bezuidenhout’s Sagerac. Rather than choosing between tequila or mezcal, I used both, mirroring Phil Ward's Oaxacan Old Fashioned proportions. For the recipe format, I went with a Smash style similar to Dale DeGroff’s Whiskey Smash.

1:1 Simple syrup will also work

Half of a medium-sized lime
Half of a medium-sized lime
I used blanco but a reposado would work and be Phil Ward-approved
2 lf
Sage tip as garnish
15 ml

Instructions

  1. Muddle lime wedges and sage leaves in the simple syrup.
  2. Add all remaining ingredients along with ice and shake vigorously.
  3. Strain twice through a fine mesh into a rocks glass.
  4. Top up with crushed ice.
  5. Garnish with a sprig of sage.
