first you make the lager reduction :
1 bottle of lager beer you put in a pan on a low heart add 2 lemon zest 2 orange zest 2 grapefruit zest and a small spoon of oregano bring the mixture to a boiling point and then add 200 gram of sugar before your turn off the heat in 2 minutes add 4 pieces of cardamom and 4 pieces of cloves after you finish the mixture give it an ice bath with adding 3 cl of pernod absinthe

2.25 cl lager reduction
1.5 cl tio pepe fino sherry
0.75 cl lime juice
egg white
first you add all the ingredient to a shaker
dry shake for 1 minutes
add ice to the shaker and shake it well
