Instructions

  1. Chill a highball glass and keep it empty, with no ice.
  2. Shake the egg white, lemon juice, lime juice, simple syrup, absinthe and Scotch with ice, then strain the drink back into the shaker and leave the ice behind.
  3. Shake again without ice to build up the foam.
  4. Pour about two thirds of the drink into the glass from well above the rim. With your other hand, pour the club soda at the same time so the two run into the glass together.
  5. Let the drink settle for at least a minute so the foam firms up. A fridge or freezer is ideal for this.
  6. Pour in what is left in the shaker. The foam should rise high above the liquid.
