Instructions

  1. Add the Amaro Montenegro, lemon juice, simple syrup and egg white to a shaker with ice.
  2. Shake hard, then strain the liquid back into the empty shaker and discard the ice.
  3. Shake again without ice to build a thick foam.
  4. Fine strain into a rocks glass filled with fresh ice.
  5. Garnish with a lemon zest twist.
