Instructions

  1. Chill a cocktail glass.
  2. Put the mint sprigs in the shaker and press them lightly, just enough to bruise the leaves.
  3. Add the lemon juice, simple syrup, gin, St-Germain and peach bitters, then fill the shaker with ice.
  4. Shake hard until the shaker is cold.
  5. Strain through a fine strainer into the chilled glass.
  6. Garnish with a lemon zest twist.
