Moko Jumbie

0

A shaken Jamaican rum sour with lime, pineapple syrup and Cardamaro, with a dash of absinthe for a touch of anise. Created by Frederic Yarm in Somerville, Massachusetts, in 2021.

Frederic Yarm created Moko Jumbie in 2021 as a Corpse Reviver #2 variation, after noticing tropical flavors in Cardamaro. Together with gin and lemon juice it gave pineapple notes, which pineapple syrup then sweetened, and an overproof white Jamaican rum balances the low-proof ingredients before lime juice and absinthe round off the drink. The name refers to the Moko Jumbie, a masked stilt walker seen at Carnival and described as a healer spirit or ghost.
