Instructions

  1. Maui base:
  2. Mix lime and chilli demerara sugar into a paste.
  3. Leave the paste to macerate in the cold for six hours.
  4. Drink:
  5. Chill the cocktail glass.
  6. Add the white rum, spiced rum, pineapple juice and some of the maui base to a shaker.
  7. Fill with ice and shake.
  8. Fine strain into the chilled glass.
  9. Garnish with salt and an orange wedge.
