Instructions

  1. Mat's Father Father is a bitter, herbal highball combining toasted oregano-infused gin with N2O-charged coffee, topped with tonic.
  2. Build 1 oz (30 ml) toasted oregano-infused gin and 2 oz (59 ml) espresso/coffee over ice in a highball.
  3. Top with tonic water.
  4. Finish with a half rim of oregano and lemon juice.

  7. Toast fresh oregano, then infuse in gin (see source for timing). The toasted version is preferred over an untoasted infusion for this cocktail.
  8. — Rapid N2O coffee (iSi whipper method) — cold-extracted coffee
  9. In a 0.5 L iSi whipper, combine 72 g coarse-ground coffee and 12 oz (355 ml) water. Seal and charge with 1 N2O canister. Shake vigorously (refrigerate if desired). Hold upright, slowly release the pressure, then strain the contents through a coffee filter.
