Shake Madeira, Simple Syrup, Angostura Bitters, Egg White with ice. Strain into a coupe.

For winter Flips, I drew inspiration from Jacob Grier’s PX Flip but opted for Malmsey Madeira instead of Pedro Ximenez sherry due to its less sweet profile. To balance flavors, I followed Misty Kalkofen's lead with the Fort Washington Flip and added maple syrup. Initially an off-menu creation, it eventually found a spot on the menu at Livestock Tavern in Honolulu by late 2017.

Instructions

  3. Strain this mixture into a big coupe glass
  4. Top it off by grating fresh nutmeg over the surface
