A simple two-part highball — Lillet Rosé over ice, topped with tonic. The tonic's quinine bitterness sits in nice contrast to the soft red-fruit and citrus of the Lillet.

The Lillet Tonic format (originally with Lillet Blanc) is a 2010s riff on the Spanish/Italian Vermouth Tonic that swept across European hotel bars. The Rosé version followed Lillet's 2012 Rosé release and uses the same dilution ratio. Thyme garnish is a popular Nordic touch — the herbal note bridges the Lillet's botanicals and the tonic's quinine.

Instructions

  1. Fill a tall glass to the rim with ice cubes.
  2. Pour in 50 ml Lillet Rosé.
  3. Top with 100 ml chilled tonic water.
  4. Stir once with a bar spoon.
  5. Garnish with half a grapefruit slice on the rim and a sprig of fresh thyme dropped in.
