A blush-pink French spritz built on Lillet Rosé — softer and less bitter than the Aperol or Sarti versions, with prosecco for length and a splash of soda to keep it dry.

Lillet Rosé was released in 2012 as the third colour in the Bordeaux house's range (after the long-standing Blanc and Rouge). The spritz format predates it by decades — the Habsburg-era Venetian template that also gave us Aperol and Hugo — but the Lillet Rosé Spritz quickly became the brand's flagship serve worldwide as the Lillet category grew in the 2010s.

Instructions

  1. Fill a large wine glass with ice cubes.
  2. Pour in 60 ml Lillet Rosé.
  3. Top with 100 ml chilled prosecco.
  4. Finish with a splash of soda water (~30 ml).
  5. Stir once gently to combine.
  6. Garnish with a grapefruit slice or a wedge of fresh strawberry on the rim.
