At Ross' El Niño, the recipe typically includes blanco tequila and strawberries. But once I was short on ingredients, so I opted for red syrup and plum to maintain the drink's vibrant color. This became my first truly enjoyable tequila cocktail. Ross likely named it after the weather event associated with the infant Jesus—since there’s already a La Niña, this one pays tribute to Mary, the Virgin of the Nativity.
